Ingredients

    3 eggs
    1 cup Egg whites
    1/4 cup low-fat milk
    1 tbsp whole-grain Mustard
    3 cups chopped Broccoli
    2 tbsp Extra Virgin Olive Oil
    6 Scallions
    1/2 cup shredded Sharp Cheddar Cheese, divided

Directions

Lightly beat eggs, egg whites, milk, and mustard.

In a 10-inch oven safe nonstick pan, saute the broccoli in the oil over medium-high heat until bright green and still crisp, about 2 minutes. Stir in the scallions and cook for 30 seconds.

Pour the egg mixture and half of the cheese into the pan. Tilt the pan to distribute the mixture. Continue cooking.

When the edges are cooked, sprinkle the remaining cheese over the top and place under a broiler on high to lightly brown the top and finish cooking the eggs, 7-10 minutes.
