Ingredients

    3 cups cooked brown rice, cooled
    2 hard boiled eggs, chopped
    1 can (6 oz.) albacore tuna in water, drained
    1 medium tomato, chopped
    1 small red onion, chopped
    1/2 cup green olives, chopped
    2 TBS olive oil
    1/4 cup red wine vinegar
    Fresh cracked black pepper

Directions

Prepare brown rice as directed and cool. Drain tuna and add to cooled rice. Add chopped eggs, tomatoes, red onions and green olives. Mix with brown rice. Add olive oil and red wine vinegar. Mix until combined. Add fresh cracked pepper for taste.
