This creamy hearty soup is always a filling pleaser. This creamy hearty soup is always a filling pleaser.
Number of Servings: 5


    Zucchini, 3 cup, sliced
    Onions, raw, 1 medium (2-1/2" dia)
    Chicken Broth or Bouillon, 2 cup (8 fl oz)
    Carnation Instant Nonfat dry Milk, 1 cup
    Cheddar Cheese, 6 oz (remove)


Cut Zuchini and onions in chunks and put in pot. Add Chicken broth and cook until zucchini is soft. With a hand Blender(or place in blender, then return to pot) purree zuc and onions. Add 1cup of carnation Instant nonfat milk and stir well. (May also use Coffee Mate) Serve with 1.5 oz shredded cheese sprinkled on top (or Parmesan).
Makes 4-6 servings depending if main meal or side.
