Number of Servings: 6

Ingredients

    2 cups pasta, cooked
    2 tsp olive oil
    1 onion, chopped
    4 cups baby spinach, lightly packed
    1 cup pasta sauce
    1/2 cup light ricotta cheese
    16 ready-to-cook meatnalls
    1/2 cup mozzarella cheese, shredded
    1 cup pasta water (reserved)
    2 tbsp fresh basil (optional)

Directions

1. Preheat over to 375F
2. In a large non-stick skillet, heat oil over medium-high heat
3. Cook onion under tender, about 5 mins.
4. Stir in the spinach, remove from heat and cover until the spinach is wilted, about 2 mins.
5. Uncover and let cool completely
6. Stir in cooked pasta, reserved pasta water, tomato sauce, and ricotta
7. Transfer to an 8x8-in baking dish
8. Nestle meatballs evenly in the pasta mixture
9. Top with mozzarella
10. Baked covered with foil for 20 mins
11. Uncover and bake an additional 10 mins
12. To serve, garnish with fresh basil
