Ingredients

    1 lb Ground turkey, 93% lean
    1 cup chopped red pepper
    1 cup chopped onion
    2 cloves chopped garlic
    1/2 cup salsa
    2 cups refried beans
    6 small red potatoes
    2 cups shredded cheddar cheese Cumin and black pepper to taste


Directions

Preheat oven to 350.
Coat a skillet with cooking spray and heat. Add peppers,chopped garlic, and onions, cooking until softened.
Add ground turkey and cook, stirring often until meat is browned. Season with black pepper, and cumin powder to your tastes. stir in salsa and refried beans to turkey mixture.
Meanwhile, coat a 9x12 baking dish with cooking spray. Layer potato slices to cover the bottom, then top with half of the meat mixture. Layer the rest of potato slices, top with remaining meat mixture, then sprinkle with cheese all over the top of the dish.
Bake for 35 min. covered with tinfoil then cook 5 minute uncovered until finished or until potatoes are softened and cheese is melted and bubbly.

I cut it into 8 even pieces
