    1/2 cup Greek Yogurt, plain, nonfat
    1 clove Garlic, minced
    Black Pepper to taste
    6 slices turkey bacon
    4 slices Wheat Bread, lightly toasted
    1 Tomato, Roma, sliced
    Romaine Lettuce, torn or shredded


Note: This recipe yields extra white sauce. If less yogurt was used, the garlic would be overpowering. Store leftovers in a covered container in the refrigerator for up to 7-10 days. Sauce is excellent as a replacement for tartar sauce with fish!


Prepare the sauce: Stir together the yogurt, garlic, and pepper until smooth and thoroughly combined. Cover and chill for at least 30 minutes prior to assembling sandwiches.

Lightly spray a large pan with nonstick spray. Briefly heat over medium-low heat. Add as many strips of bacon as will comfortably fit. Cook for about 5 minutes, until crispy, turning every 2 minutes to prevent burning. Drain on a paper towel. Repeat with any remaining bacon. Once cool, break each slice in half.

To assemble sandwiches, spread 2 teaspoons of white sauce across one side of each bread slice. Top 2 bread slices with lettuce, 2-4 tomato slices, and 6 bacon halves (equal to 3 slices). Top with another coated bread slice (white sauce facing down).
