Introduction
Fast & SUPER easy, this recipe came from 'Miss Fluffy's Rice Cookbook', a beloved little family heirloom which was given away by Sperry New Holland farm machinery dealers in the late 1960's or early 1970's. Fast & SUPER easy, this recipe came from 'Miss Fluffy's Rice Cookbook', a beloved little family heirloom which was given away by Sperry New Holland farm machinery dealers in the late 1960's or early 1970's.Number of Servings: 4
Ingredients
-
1 C. uncooked rice (doesn't have to be white)
2 C. low sodium, low fat chicken broth
1 Pat butter (salted or unsalted) could use less
1/2 t. Rosemary
1/2 t. marjoram
1/2 t. thyme
Salt to taste, if desired
Directions
Combine all ingredients in a saucepan. Bring to a boil, stir well. Cover and cook over very low heat for 14 minutes or until the rice is tender and the liquid absorbed. Serves 4.
NOTE: Broccoli, mushrooms, tomatoes, parsley, or a little diced fish, meat or low fat cheese make good additions. Low sodium V-8 juice is also very good substituted for 1/4 to 1/2 of the water. I have even gotten rave reviews substituting in a tablespoon each of lemon and lime juice when I serve it with fish.)
