Ingredients

    1.75 cup Cannellini Beans (White Kidney Beans - 1 14.5 ounce can, rinsed and drained)
    2 cups cubed Potato, raw
    1 14.5 oz. can Italian Stewed Tomatoes with Basil, Garlic, and Oregano, undrained and cut up
    1 14.5 oz. can reduced sodium chicken broth
    8 oz. Premio Italian Chicken Sausage with kale (Costco) - cooked and cut into half-inch slices
    4 cloves Garlic
    .25 tsp crushed red chili pepper flakes (by DBEAU57)
    2 cups chopped escarole or Swiss Chard (nutrition info has Endive/Escarole)
    6 tbsp shredded Asiago Cheese

Tips

I modified the recipe to use chicken/kale sausage and chicken broth. This reduced the calories/fat a little from the original recipe.


Directions

1. Combine all ingredients except greens and cheese in 4 qt. Dutch oven.
2. Bring to boiling.
3. Reduce heat and simmer, covered, for 25-30 minutes or until potatoes are tender.
4. Before serving, stir in escarole.
5. Sprinkle 1 Tbsp. cheese over each serving of soup.
