Ingredients

    3.6 oz Roasted Sweet Red Pepper (by BRP206)
    .5 small Onions, raw
    .66 serving Baby Bella Mushrooms (3 oz)
    2 clove Garlic
    3.5 serving Tomato products, Hunts Diced Tomatoes w/ Basil, Garlic, and Oregano
    2 1tsp Olive Oil

Tips

Looking for a vegetarian sauce to serve with spinach tortellini. I love all these vegetables and combining them just seemed like the natural thing to do.


Directions

Roast pepper over open flame. slice thin. thinly slice half a small onion. Use .66 serving sliced baby bellla mushrooms
mince 2 cloves garlic. place each veg in pan first pepper followed by garlic followed by mushrooms. Let saute for a total of ten minutes. Add whole can of tomatoes including liquid. Simmer for 10 minutes. Serve over Spiinach tortellini.
