    4 serving Cod fillet, 4 oz raw, from Walmart
    4 Sweet Potatoes, chopped
    1 Zucchini, chopped
    1 Yellow Squash chopped
    2 cup, sliced Mushrooms
    1 tbsp Paprika
    1 tbsp paprika, smoked
    1/2 tsp ground cumin
    1/2 tsp Oregano, ground
    3/4 tsp Lawry's Garlic Pepper
    1/4 tsp Ground Coriander
    1/8 tsp Cayenne Pepper
    1 tbsp Extra Virgin Olive Oil


Preheat oven to 400 degrees. Mix together all of the spices to create the blackening seasoning.
Chop sweet potatoes and toss with olive oil and half of the blackening seasoning.
Cover a baking sheet with foil and spray with cooking spray. Spread the potatoes on the baking sheet in a single layer and place in the oven. Cook for 20 minutes. Remove from oven. Push the sweet potatoes to one side of the baking sheet and add the fish.
Mix squash, zucchini and mushrooms together and add to the baking sheet. Sprinkle with remaining blackening seasoning. Return to oven and cook for 10-20 minutes until fish is flaky and cooked through. Cooking time will vary depending on the thickness of your cod.
