Ingredients

    1 block Tofu, firm
    2 cup Spinach, fresh
    1 cup, chopped Onions, raw
    1 cup, pieces or slices Mushrooms, fresh
    56 gram(s) Red Bell Peper
    28 serving Cherry Tomatoes, Fresh, 1 Tomato
    2 serving Home-Fried Potatoes (1 potato)
    2 serving Salt, Himalayan Pink & Coarse Sea, Pampered Chef 1/4 tsp (by PCHEFLORA)
    2 serving Frontier Organic Ground Tumeric 1 tsp (2 g) (by RURABE)

Directions

Scramble tofu
1.Place chopped onion in a frying pan with a little water and fry for 2 minutes
2.Add diced red bell pepper and mushrooms to frying pan, and fry for 2 minutes, tossing well
3. Dice the tofu and add to frying pan, use a fork to crumble the tofu until it looks similar to scramble eggs.
4. Add the pink salt and turmeric, adjust to taste
5. Continue to fry for a further 5 minutes, tossing ingrediants
6. Add chopped spinach to frying pan and stir in well, allow to cook for a further 2 minutes or so
Mini Roasties
1. Peel and cube the potatoes into small 1cm pieces
2. Deep fat fry until golden brown
Portion Control
1. Divide mini roasties between seven 1 1/5 cup dishes.
2. Divide the tofu scramble into each dish
3. Add 4 cherry tomatoes to the opposite end of the dish to the mini roasties.
Cover each portion and store in the refrigerator for up to one week

To Reheat:
Take a portion out of the refrigerator and microwave for 2 1/2 minutes until hot
