Number of Servings: 6


    Boneless, skinless chicken breast cut in bite size pieces
    1 bunch Asparagus, cut bite size
    1 Zucchini, sliced
    2 cups Fresh broccoli, cut bite size
    1 Red Pepper, cut bite size
    4 Green Onions, sliced
    3 Cloves Garlic
    3 TBS Olive Oil, Halved
    3 TBS Soy Sauce
    1/2 Cup Sugar Free Apricot Preserves


Brown bite-sized chicken in half of the olive oil. Set Aside on plate.
In the other half of the olive oil, stir in garlic then add veggies and cook until crisp-tender. About 5 minutes.
In separate bowl, whisk together the soy sauce and preserves.
Once veggies are done, put chiken back in with veggies and add the soy sauce/preserve mixture. Stir until coated and serve immediately.
