Ingredients

4 medium apples, peeled and sliced thinly
4 large eggs
4 tablespoons Sugar
5 tablespoons Flour
4 tbsp Extra Virgin Olive Oil
1 tsp Baking Powder
.5 cup Honey
Directions
Preheat oven to 350.
Grease an 8" cake pan or place parchment paper in bottom.
Layer apples in the pan in a spiral pattern.
Whisk together 2 eggs, plus the flour, sugar, baking powder, and olive oil. Pour batter over the apples and bake for 20 minutes.
Meanwhile, whisk together the remaining 2 eggs and the honey. Remove the pan from the oven and increase the temperature to 400 degrees. Pour the honey-egg mixture over the cake. Return the cake to the oven and bake another 15-20 minutes or until golden brown and a knife inserted in the middle comes out clean.
Serve warm or cold.
