Introduction
Hearty & Tasty Soup that is good for you. Hearty & Tasty Soup that is good for you.Number of Servings: 12
Ingredients

2 T. olive oil
1 onion chopped
3 cloves of garlic
1 c. raw carrot cut in small pieces
1 c. raw celery cut in small pieces
3 cans chicken broth
1 can green beans (drained
1 can garbanzo beans (chickpeas) (drained)
1 can dark red kidney beans (drained)
1 lg can stewed Italian Tomatoes
1 small frozen pkg. spinach
1 cup dry small pasta
Directions
Add oil to heated pan. Add onions, garlic, carrots and celery. Gently cook until vegetables are done and mash to touch. Add 3 cans of chicken broth. Simmer about 5-10 min. for vegetables to finish cooking and flavors blend.
Add green beans, garbanzo beans, kidney beans and tomatoes to the crock pot. Add chicken broth and cooked vegetables. Cook on high 3 hours. Add one box of frozen spinach (squeezed dry) and 1 cup of dry small pasta. Cook about another hour until pasta is cooked. Season w/ salt and pepper to taste.
Great one pot meal. Serve w/ Parm. cheese and crusty bread.
