Ingredients

1.0 cup, shredded Cheddar or Colby Cheese, Low Fat
1.0 tsp Pepper, red or cayenne
0.5 tsp Salt
2.0 cup La Victoria Enchilada Sauce
1.0 clove Garlic
0.5 cup, chopped Onions, raw
16.0 oz Turkey, Ground turkey, 93% lean
6.0 serving Mission corn tortillas Restaurant Style ( 1 serving = 2 corn Tortillas)
Directions
1. Preheat oven to 400f
2. Brown turkey with, onion, garlic, cayenne pepper and salt.
3. Add 1 cup of enchilada sauce. Simmer 10 minutes
4. Coat bottom of a 13×9 casserole dish with half of remaining sauce.
5. Line the bottom of the pan with 6 tortillas. Top with half of turkey mixture do not drain. Add another layer of tortillas, then remaining turkey. Add the last 6 tortillas to the top.
6. Pour remaining enchilada sauce over top. Sprinkle cheese evenly across the top. Cover and bake for 30 minutes.
