Ingredients

    1 lb. ground beef, lean
    1 large egg
    1/4 cup ketchup
    1/2 cup bread crumbs (or crushed saltine crackers)
    1/2 onion, diced
    1/2 tbsp Worcestershire sauce
    salt and pepper, to taste

    Topping:
    1/4 cup ketchup
    1 tbsp brown sugar

    Mashed Potatoes:
    4 medium potatoes, peeled and cut in half
    2 tbsp butter
    1/2 cup low-fat milk
    salt and pepper, to taste

Directions

In a large mixing bowl, whisk 1/4 cup ketchup, Worcestershire sauce, and egg. Mix in ground beef, bread crumbs, onion, salt, and pepper.

Form mixture into a round loaf, small enough to fit into a small round baking pan in the pressure cooker. Mix together ingredients for topping and spread on top of meatloaf.

Pour 1 cup water or broth into cooker. Place potatoes on the trivet in the cooker. Place meatloaf in the baking pan and place on a steam rack on top of the potatoes. Lock the lid and cook on High pressure for 10 minutes.

Let the cooker's pressure naturally release for 10 minutes before quick releasing any remaining pressure.

Meatloaf may be placed under the broiler in the oven until the topping begins to caramelize, if desired.

Mash potatoes with butter, milk, and salt and pepper.

Makes 6 servings.
