Ingredients

    7 large shrimp, cooked and halved
    6 rice papers, soaked in warm water until just soft
    1 C each: lettuce, cabbage, chopped zucchini/cucumber, watercress sprigs
    3 scallions, green parts only
    1 jalapeno sliced long and thin
    3 T cilantro, chopped
    3 T basil, chopped
    sauce:
    3 T lite soy sauce
    2 T rice wine vinegar
    1 lime, juiced
    1 T natural peanut butter
    sugar/splenda to taste

Directions

chop all veggies , stir sauce and add hot water as needed to thin, then begin to soak each rice paper in warm water until just soft, then stuff with a little of each ingredient and roll like a burrito.

very, very healthy, fresh and yummy.

i sized these as two servings mostly because they are very filling, but all 6 would just as easily make a healthy one serving dinner.
