Ingredients

    1-1-2 to 2 lbs salmon fillets
    1 tbsp olive oil
    1 tsp allspice
    1 tsp brown sugar
    1/2 tsp ground cumin
    1/2 tsp dried thyme
    8 slices pineapple
    1 tbsp lime juice

    Yellow Rice:
    1 cup white rice
    1-1/4 cups chicken broth
    1 tbsp butter
    1/4 cup onion, chopped
    1/2 tsp sea salt

Directions

Soak rice in cool water for 20 minutes, then rinse several times with fresh water. Allow to drain well.

In your pressure cooker, sauté onions in butter until soft. Add rice, stir to lightly saute, then add in chicken broth and sea salt.

Place salmon fillets on a tall trivet in bottom of pressure cooker.

In a small mixing bowl, combine oil, allspice, brown sugar, cumin, thyme, salt, and pepper. Spread mixture over salmon.

Secure lid and cook using the Rice setting.

Perform a quick release to release pressure.

Sprinkle lime juice over the cooked salmon and rice. Serve with pineapple slices.
