    whole eggplant sliced
    marinara sauce (newman's own)
    8 slices sliced mozzarella cheese
    dried basil, garlic powder, oregano (to taste)
    kosher salt
    8 oz barilla pasta


-preheat oven to 425
-cook pasta according to package directions
-slice eggplant and sprinkle lightly with salt dried basil and garlic powder on both sides
-bake until golden brown aprrox 8 minutes and flip over ; heat marinara on stove while eggplant is baking adding favorite spices to jazz it up (fresh basil, oregano and thyme)
-bake another 4-5 minutes until other side is golden brown

put 2oz of pasta on each plate; evenly divide the eggplant between the four plates and top each plate with 1/2 cup marinara and 2 slices of cheese.

serves 4

goes great with a salad!
