Ingredients

2 cups dry Oatmeal, such as Bob's Red Mill
3/4 cup raw unsalted nuts (such as sliced almonds or cashew pieces)**
1/4 cup Pepitas (Pumkin Seed Kernals)
3 Egg whites
2 tsp Cinnamon, ground
1 tsp Salt
2 Tb Chia seeds
Directions
Preheat oven to 225*F.
In a stand mixer whisk the egg whites on high until soft peaks form, about four minutes. In a large bowl mix the oats, assorted nuts, pepitas, cinnamon, and salt. If you want a sweet product you could add some stevia at this point. Add the whipped egg whites and gently fold into the oat mixture until fully incorporated.
Spread mixture in a thin layer on a parchment paper lined sheet tray. Sprinkle with chia seeds. Bake for 1.5-2 hours, using a spatula to break up and turn the mixture every 20 minutes. Turn off the oven and crack the door, let granola sit in the oven until it reaches room temperature, another hour or so. Store in an airtight container and it should keep for 1-2 weeks.
**I used a mixture of sliced almonds, chopped Brazil nuts, and cashew pieces, but you could use any combo of nits that you want. You just want to break them into pieces and not use whole nuts. Nuts have naturally occurring sugar, so this recipe isn't 100% sugar free, rather it is no sugar added, the egg whites are what create that pleasing crunch you usually get from sugar!
