    1 pound red potatoes or klondike potatoes quartered
    1/2 cup green olives chopped
    1/4 cup fresh squeezed lemon juice
    2 tbsp olive oil
    1/2 tsp GROUND cumin (i add a little more)
    1/2 tsp fresh ground pepper
    1/2 tsp sea salt
    3/4 cup water


cut potatoes into quarters and chop olives. in a skillet combine potatoes, olives, lemon juice, oil, cumin, salt and papper. toss to coat evenly. add water cover and bring to a boil about 10 minutes. remove lid and cook 3-4 more minutes to let sauce thicken slightly.

delish as a side dish for fish!
