Skinny Chicken and Wild Rice Soup Skinny Chicken and Wild Rice Soup

    3-4 bonless, skinless chicken breast halves
    1 cup chopped carrots
    1/2 medium onion, chopped
    3/4 cup uncooked wild rice
    1 tsp dried rosemary
    2 bay leaves
    1/4 tsp black pepper
    1/4 tsp kosher salt
    1 tsp garlic powder
    1 tsp onion powder
    1 tsp sage, ground
    1 tsp thyme, ground
    6 cups chicken broth
    2 T olive oil
    2 cloves garlic
    1/4 white cooking wine


Prep time includes time for chopping carrots and onions. Cook time assumes cooking on low for 6 hours.


Place chicken breast in slow cooker. In medium skillet, sauté onions and carrots with salt and pepper over medium heat until onions are nearly translucent. Add garlic and cook a few minutes longer. Add wine to loosen up cook bits, then dump all of this over the chicken in the slow cooker. Add to this the remaining ingredients. Cover and cook on low for 6-7 hours or high for 3 hours. Remove chicken and shred with a fork, then return back to slow cooker. Serve and enjoy!
