    1 tsp olive oil
    3/4 cup chopped onion
    2 cloves garlic, pressed
    1 (16-oz) can no salt added white beans, drained and rinsed (I used Pinto)
    1 (16-oz) can no salt added black beans, drained and rinsed
    1 (16-oz) can no salt added red beans (Kidney beans)
    12 oz salsa (your favorite)
    1 (14.5 oz) can no salt added diced tomatoes, drained
    1 tsp chili powder
    1 tsp cumin
    1/2 cup shredded cheese

    ** to keep the sodium low, remember to use low sodium canned beans and tomatoes.


Heat the oil in a large, deep skillet with a tight-fitting lid over medium heat; saute and garlic until onion just begins to turn translucent. Add next 7 ingredients (beans thru cumin); bring to a low boil then reduce heat, cover and simmer for about 5 minutes. Remove from heat and sprinkle with cheese. You can add rice to it too but remember to add the rice back into your calorie counter. Cover once more til cheese melts. Makes about 6 (1-cup) servings.
