Introduction

After searching this site for about 20 minutes I couldnt find a recipe for simple and plain pasta dough. So here it is. After searching this site for about 20 minutes I couldnt find a recipe for simple and plain pasta dough. So here it is.

Ingredients

    1 serving Tia Rosa Homestyle Flour Tortilla, 14 oz
    1 tsp Salt
    2 large Egg, fresh, whole, raw
    1 large Egg Yolk

Tips

As stated in the original recipe, I am originally posting this as a simple recipe for a pasta DOUGH. This goes up to step 7. If you wish to continue on to make a tortellini recipe you can continue to the end.


Directions

1. poor out the flour into a pile on a flat surface
2. clear out the centre and crack the yolks in the middle, add the salt on top
3. Mix with a fork
4. kneed out the dough
5. if the dough feels dry, add in water in small portions until it has reached the consistency you want (see proper consistency below)
6. let the dough rest 15-30 min
7. once dough has rested, roll out
(the first 7 steps are just for dough), if you wish to make a tortollini continue with steps 8 on
8. using any circular shape, cut out circles of dough, apx 2in in diameter
9. add in filling and fold (see image about)
10. cook in boiling water about 4 minutes
11. drain water until about 1 cup of water remains
12. return water and pasta to boiling pot and add olive oil
13. cook over high heat, tossing consistently
14. serve immediately

Serving Size: makes 30 3 inch peices
