Ingredients

    .5 package (10 oz) Spinach, fresh
    1 cup, pieces or slices Mushrooms, fresh
    .5 large Onions, raw
    4 oz Athenos Reduced Fat Feta Cheese
    12 large Egg, fresh, whole, raw
    .5 cup Milk, 1%

Directions

Saute spinach, mushroom, onion in evoo cooking spray until wilted and onions are translucent. Mix eggs and milk, salt and pepper to taste. Add vegetables and feta and stir to combine. Spray 13x9 casserole dish with evoo spray and add mixture. Cook for 25-30 minutes at 350 degrees.
