    Broccoli, fresh, 1 bunch
    Red Peppers cut into lg. pieces 2 cup
    Zucchini, 2 cup, sliced thick
    Onions, raw, 1 large
    Green Beans , 1 cup
    Olive Oil, .25 cup
    Salt, 1 tsp
    Black Pepper .25 tsp
    Garlic, 6 cloves
    balsamic vinegar, 1 tablespoon


Preheat oven to 400 degress.

Cut all Vegetables and into large chunks and place on a cookie sheet.

Drizzle Olive Oil, Balsalmic Vinegar on top. Add Garlic, and Salt & Pepper to taste.

Place in the oven for about 10 minutes. Turn the vegetables over and cook another 10 minutes or until the veggies are tender.

  • Yum! This is making me hungry. And so simple to do too! I am going to try this! I think I may add carrots to that mixture though! I got a great deal on them recently and I have quite a surplus! HAHA!!!! - 6/7/08
