Ingredients

    1 c. oats
    1 c. all purpose flour
    2 t. baking powder
    1/4 t. baking soda
    1/2 t. salt
    1/3 c. light butter
    2 eggs
    1 c. mashed banana
    1 t. vanilla extract
    1/4 c. mini chocolate chips

Directions

Makes 12 servings.

Preheat oven to 350.

Grease 8x4 loaf pan with cooking spray.

Pulse oats in a food processor until the consistency of flour. Mix with flour, baking powder, baking soda, and salt in a bowl.

In a separate bowl, beat sugar, eggs, banana, and vanilla with a mixer on medium speed.

Mix wet ingredients into dry ingredients until the mixture just comes together.

Fold in chocolate chips.

Pour in to pan, bake for 1 hour at 350 or until tester comes out clean.

    Very Good
    This came out really good. Definitely don't cook it for an hour though! I baked it for 45 minutes and it was a little overcooked. Also it calls for butter in the ingredients and it does not say anything about butter in the directions, didn't end up using the butter at all though. Used 1/4 c Sugar to - 9/6/08

    Very Good
    It says cook for an hour. Really watch this b/c I put it in for 55 min and it was almost too done. Also it calls for sugar but doesn't say how much. I put 1/4 c and it made it sweet enough. I would make this again!! - 6/22/08
