0.5 cup red bell pepper-chopped (by CLAIREEL)
0.5 cup, chopped Onions, raw
1 cup, chopped or diced Broccoli, fresh
12 large Egg, fresh, whole, raw
1 tbsp Coconut Oil
Directions
1. Preheat oven to 325
2. Use coconut oil to generously grease a 12 cup muffin tin.
3. In a medium bowl, stir together the bell pepper, onion and broccoli. Evenly distribute the mixture among the muffin tin.
4. In a medium bowl, beat the eggs, salt and pepper. Pour the eggs over the vegetables and place in the oven until the muffins are firm in the middle, about 25 minutes.
5. Allow the muffins to cool for 5 minutes, then run a knife around the edge of each muffin. Unmold the egg muffins, then serve.
