Ingredients

1/3 cup Stevia (the kind that measures cup-for-cup the same as white sugar. You can use up to 1/2 cup depending on how sweet you want them-it wont' change the calorie count.)
1/4 cup (2 oz) unsweetened Applesauce
1/4 tsp Nutmeg, ground
1 cup Whole Wheat Flour
1 tsp Ground Cinnamon (Saigon)
1 tsp Baking Powder
1/2 cup (4 oz) Almond Milk, Unsweetened Vanilla
1 tsp vanilla extract
1 tsp Vanilla Extract
Tips
If you wanted to make these with a little different flavor, you can substitute mashed banana for the applesauce and use almond extract or coconut flavor instead of vanilla. This might impact the calorie count a bit.
Directions
Preheat oven to 375 degrees.
Mix together the stevia, nutmeg, and cinnamon. Add the vanilla, applesauce, and almond milk and mix well. Add the flour and baking powder and stir just until combined (if you over-stir, they will be tough and chewy). Batter should be a little clumpy and thick.
Spray a mini muffin pan* with non-stick spray or use mini liners. Drop by 3/4 teaspoons into pan (they should just cover the bottom but don't worry, they'll poof up). Cook for 8 minutes, or up to 10 minutes if you want crispy donuts.
*I've always found pan labels to be vague, so I want to clarify. When I say mini muffin pan, I don't mean a cupcake pan. I mean one of those pans that have the little cups that could hold about a tablespoon of water in each cup. Mine is a big sheet that has 8x6 cups, but I'm sure they make smaller sheets.
