Number of Servings: 4

Ingredients

    1 tbsp Extra Virgin Olive Oil
    2 cup, Zucchini, sliced
    1 cup, Green Peppers, chopped
    1 med.,Onions, chopped
    2 clove Garlic
    1 can Black Beans
    1 can Diced Tomato
    2 cup Water
    1 cup Brown Rice, long grain (dry)
    1 lime yields Lime Juice
    4 serving Corn Frozen or can
    2 oz Cheddar


Directions

Heat oil in large skillet over medium heat. Add zucchini and green pepper, onion and garlic; cook 5 minutes, stirring occasionally.

Add drained and rinsed beans, undrained tomatoes, water, lime juice, spices and rice. Increase heat and bring to a boil.

Cover; reduce heat and let simmer for 25 minutes or until liquid is absorbed and rice is tender.

Sprinkle with cheese.

Serving Size: 4 equal bowls
