Ingredients

    3/4 cup Big Tree Farms Organic Blond coconut sugar
    .5 cup Butter, salted, softened
    1 large Egg, fresh, whole, raw
    1 tsp Vanilla Extract
    1 cup All-Purpose Flour, Gluten-Free - Bob's Red Mill's (by MGALL4)
    2 TB All-Purpose Flour, Gluten-Free - Bob's Red Mill's (by MGALL4)
    1 cup Ghirardelli 60 Cacao Chips (16 pieces x 9.5)

Tips

Recipe suggests swapping out cacao nibs for the chocolate chips. This would greatly reduce the amount of sugar but not sure how it tastes....


Directions

Cream butter and sugar together in large mixing bowl. Add egg and vanilla, cream together. Add GF flour in two batches. Stir in chocolate chips. Cover and REFRIGERATE for 4 hours.

Using 1 TB measure, roll into balls and place on parchment lined or non-stick baking sheet. (You can also use a 1TB size cookie scoop!) Bake 7-10 minutes. Let cool for 5 minutes before transferring to cooling rack.

Serving Size: Makes 11-12 cookies
