Introduction

This is a great recipe when you need a boost of protein. It also provides folate. And it's pretty fast an easy, so you can make it for breakfast even on weekdays! Can be served over whole wheat high-fiber toast for an extra calorie/carb/fiber boost. This is a great recipe when you need a boost of protein. It also provides folate. Ingredients

    2 large eggs
    1/2 cup fresh spinach, washed and drained
    1/4 cup chopped onion
    2 slices of deli ham (e.g. Healthy Choice or Healthy Ones), cut ino small strips.
    1/4 cup nonfat milk
    pepper and salt (to taste)
    Nonstick cooking spray

Directions

Makes one 1 cup (approx.) serving.

1. Chop onions; wash and drain spinach.
2. Spray a small skillet or omelette pan with nonstick spray and heat to medium-high.
3. When skillet is hot, add onions. Saute for approx. 3 minutes, or until they begin to soften. Add spinach and stir until wilted.
4. Add ham, saute until lightly browned.
4. Combine eggs and milk; beat until small bubbles form. Add salt and pepper (optional).
5. Pour egg mixture over onions, spinach, and ham. Turn heat down to medium. Move pan around to distribute. Allow to set (approx. 2 minutes).
6. Using a fork, begin to scramble the mixture, lifting and folding repeatedly. Continue to lift and fold while eggs cook (approx. 4-5 minutes).
