Introduction
I wasn't sure what to call this. I eat it sometimes in a bowl with some lite sour cream, scallions and fat free cheese. Other times I fill low carb tortillas and make delicious burritos. I use Hot Rotel in mine, you can use regular tomatoes if you don't like it spicy. I wasn't sure what to call this. Ingredients

Pork Tenderloin, 16 oz cubed
Canned Tomatoes, 1 can
*Kuner's Southwestern Black Beans with jalepenos, 1.75 cup
Lime Juice, 1 fl oz
Onions, raw, 1 medium (2-1/2" dia)
Green Peppers (bell peppers), 0.75 cup, chopped
Olive Oil, 2 tbsp
Garlic, 3 cloves
Chili powder, 1 tbsp
Pepper, black, 1 tbsp
Directions
Cube pork tenderloin and cook in olive oil for just a few minutes. Add chopped garlic, onion and bell pepper. Cook for about 10 minutes. Add drained tomatoes and drained black beans along with lime juice and spices. Allow to cook down some, about 30 minutes on low heat.
Makes enough for about 8-10 burritos, or approx. 6 1-cup servings. Nutritional info is calculated for 8 servings (about 3/4 Cup)
NOTE: I use a Chili Powder blend that has chili, onion, garlic, cocoa powder, oregano, cayenne, cumin, cinnamon and cloves. It adds a great flavor. It's made by The Spice Hunter.
