Ingredients

    8 thigh, bone and skin removed Chicken Thigh
    6 medium Tomatillos, chopped
    2 Poblano Peppers, quartered
    1 Cubanelle Pepper, chopped (or a bell pepper if you can't find one)
    1Green Bell Pepper, chopped
    1 large Onions, chopped
    6 clove Garlic, chopped
    1 tbsp Cumin powder
    1 tsp Salt
    1 tbsp Cilantro, dried
    1 tbsp Fish Sauce

    Optional: Jalepeno or Serrano pepper(s)

Directions

Add all except the cilantro and fish sauce to the Instant Pot. Cook on High for 15 minutes. Remove the thighs, add the cilantro and fish sauce and blend (either with an immersion blender or in a blender). Shred the chicken, add it back to the chili.

  • I can't rate this because I haven't tried it, but it looks great! One question. I don't use or have fish sauce. I hate fish actually. Is thereanything else I can use to substitute? - 8/5/17
