    Mushrooms, fresh, 1 cup, pieces or slices (remove)
    Spinach, fresh, 4 cup (remove)
    *Madame Chevre Fine Herbs Soft Goat Cheese, 4 oz (remove)
    Dill weed, fresh, 4 sprigs (remove)
    Olive Oil, 3 tbsp (remove)
    Almonds, .25 cup, sliced (remove)
    Sweet potato, cooked, baked in skin, without salt, 2 large (remove)
    1TBSP Rice Vinegar


preheat oven to 400 degrees, wrap sweet potatoes in foil and bake for between 45-70 minutes depending on the size of the potatoe. While they are baking saute mushrooms in 1.5Tbsp of olive oil. This takes about 5 min. Stir occassionally. Once done move mushrooms to a large bowl. Then add spinach and remaining olive oil and saute. Add vinegar and saute for another minute. combine mushrooms with spinach in bowl. add goat cheese and mix until goat cheese is just about melted. chop up the dill and add to the mix. then add the almonds to the mixture. Remove the fully cooked potatoes and cut an "X" and stuff with the mixture. Serve.
