Number of Servings: 1

Ingredients

5 oz (140 grams) riced Cauliflower
1 cup (4 oz or 112 grams) Mozzarella Cheese, part skim milk
1 large Egg, fresh, whole, raw
    1 tsp Garlic
1/4 tsp Garlic powder or garlic salt
    1 tsp dried Oregano

Directions

PULSE one head of chopped cauliflower in a food processor into grain/rice sized pieces or buy it already riced. Microwave the cauliflower for 8 minutes.

PRE-HEAT the oven to 450 degrees

IN a medium bowl, stir together the cauliflower, 1 cup of cheese, oregano, garlic salt (or powder), garlic and the egg.

SPRAY a cookie sheet with cooking spray. Pat mixture out into a 12-inch circle or into a rectangle (this actually works better when transferring the finished pizza to a plate). Spray top with oil. Bake the crust for 12 minutes.

TURN the oven setting to Broil

TOP the pizza with your favorite toppings (which not included in the nutritional info). Broil 2-4 minutes until the toppings start to brown and the pizza is hot & bubbly.

REMOVE the pizza to a plate. It will be quite soft on the bottom so use as large a spatula as you can under the pizza and slide it off the cookie sheet onto the plate.

ENJOY!
