    7 Jalapeno Peppers (seeded and de-veined, chopped)
    1 medium Onion (chopped)
    4 Chicken Breasts
    2 cans Cream of Mushroom Soup (Reduced-Fat)
    1 cup Sour Cream (reduced fat)
    1 T ground Cumin
    11 Tortilla Shells
    1 cup Cheese


Boil the chicken until cooked. Remove from water, let cool and pull apart. Chop up onion and peppers and saute in pan. Remove seeds and veins from Jalapenos, the more you leave the hotter it will be. Then add chicken and cumin (I prefer ground cumin). Mix in soups and sour cream. Take off heat. Put about 1-2 tablespoon of mixture in a tortilla shell and then roll it up, place in an 9x18 baking dish. Repeat until have used all shells. Put remaining mixture over top the burritos and then top with cheese. Bake for 35-40 minutes at 350 degrees. This is great reheated or great to make a day or two ahead of time, put in refrigerator and then bake when you are ready to eat it.
