Ingredients

    Diced potatoes, about 10 cups (I use small red potatoes and leave the skin on)
    1/4 c. of olive oil
    1 package of Lipton Dry Onion Soup Mix
    Rosemary or other herbs to taste

Directions

Dice up potatoes into small pieces and add to a gallon ziplock baggie. Add 1/4 cup of olive oil, lipton onion soup mix, fresh herbs of your choice (garlic or rosemary or none), mix together thoroughly and spread out evenly onto a cookie sheet. Bake at 425* for approx. 35-40 minutes turning as needed and until brown and done.
