This is a pretty quick meal for one person. Plus it's vegetarian! :) This is a pretty quick meal for one person. Plus it's vegetarian! :)

    3/4 Cup Garden Rotini Pasta
    1 1/2 Cup Chopped Broccoli
    1/4 Cup Ragu Alfredo Sauce


In a small saucepan, boil some water. While you are waiting for the water to boil, cup up and measure out the broccoli. (You can add more or less too! Gotta love the veggies!)
Once the water is boiling, add the noodles. Let the noodles cook for about 5 minutes. (if you test the noodles by eating one - they should be almost cooked but not fully done.) Add the broccoli with the noodles in the water and cover the saucepan with a lid. For a couple of minutes, let this cook with the lid on. Once the noodles are done, drain the noodle, broccoli combination. Add the sauce and you're done!


This recipe can be varied really easily by using spinach instead of broccoli. Adding other vegetables such as tomatoes. You may also consider using whole wheat pasta as well.

This recipe is great for a one bowl lunch or could be paired with a nice side salad for a good dinner. :)
