Buy your pancake mix egg and dairy free and enjoy a healthy vegan breakfast.

For added variety you can try this dish with pineapple bits and chopped cherries or your favourite berries.

Number of Servings: 20

Ingredients

    1 1/2 cups organic multi grain pancake mix
    2 small apples, chopped fine
    1 small banana, mashed
    Water to bring to desired consistency

Directions

Mash banana in large bowl. Peel and chop apples and add to banana. Mix in pancake mix, adding water in small amounts to get right consistency.
Drop by spoonful into preheated non stick frying pan or griddle. When tops are bubbly and beginning to look dry, flip pancakes over.
Cook until golden brown on second side.

Makes 20 3" pancakes

Serve with Earth balance and organic maple syrup if desired.
