Introduction

This is really good I found one like this on recipezar and added some things and deletd others. This is really good I found one like this on recipezar and added some things and deletd others.

Ingredients

    for dressing
    1/4 C Sun Dried Tomatoes,
    2 TB Balsamic vinegar,
    1/2 tsp Granulated Sugar,
    1 garlic clove diced
    1 tsp oregano
    1/4 tsp pepper
    1-2 TB Olive Oil,
    for salad
    1/2 can black beans drained and washed
    1/2 C Sweet Corn kernels
    1/2 C Asparagus, fresh, chopped
    1 OZ Smoked Mozzarella Cheese, diced
    1/2 C Tomatoes, diced
    1/4 Onions, red sweet or scallions chpd
    1/2-1 C Spinach leaves torn
    1/2 C Mushrooms,
    1/2 Avocado
    1/2 tsp cumin (optional)

Directions

for Sun dried tomato Vinaigrette:
chop tomatoes and add water, spices in blender, blend till smooth then drizzle in Olive oil blend well. Dressing will keep in refirgerator for up to 1 week Makes about I cup.

For Salad;
In large bowl combine ingredients with 2 TB dressing and toss to coat. Chill until ready to serve. Serves 2 or 3 people.

If you don't want to make dressing purchase a balsamic vinaigrette and add some sun dried tomatoes.
