    1 c Old Fashion Oatmeal
    1/4 c sliced almonds
    2 egg whites
    2 tbs. olive oil

    1 pound ground turkey breast
    1 red pepper, chopped
    8 oz. stewed tomatoes
    1 tomato, chopped
    1 cup chopped red onion
    Salt and pepper to tasted


Heat 1 tbs oil in skillet. Put oatmeal, sliced almonds and salt and pepper in food processor. Pulse until grainy. Combine egg whites with oatmeal/almond combination. Shape into pattys. Fry in skillet 2 minutes each side until brown. Remove and set aside.

Using same skillet, add remaining tablespoon of olive oil. Add onion and red pepper and cook until soft. Remove. Add ground turkey to skillet and cook until brown. To the cooked turkey add the pepper/onion mix, stewed tomatoes and raw tomato. Salt and pepper to taste. Serve turkey mixture over oatmeal patty. Enjoy!
