Ingredients

    3 large Egg, fresh, whole, raw
    7 leaf Spinach, fresh
    1 oz Feta Cheese
    0.5 tbsp Olive Oi, Extra Virgin (Pampa) | 1 Tbsp. (15 mL) (by NEWJULIEA)

Tips

Make with egg whites for a lower calorie and lower cholesterol meal.

Add salsa after it is plated.


Directions

Crack eggs into a cup. Whip eggs with a fork until yoke is mixed.

Heat small skillet at medium-high, then add 1 tbsp or less to skillet. Add spinach and saute until wilted. Add egg. Fold slowly and add feta as it appears to start to solidify. Plate once it is done to your liking.
