    1 cup, chopped Onions, raw
    2 clove Garlic
    1.5 cup Trader Joe's Fire Roasted Red Peppers
    .75 tsp Diamond Crystal - Kosher Salt (by SHIRTTALES)
    4 tsp Granulated Sugar
    2 cup Broth, Chicken - Kitchen Basics Chicken Cooking Stock Unsalted (1 serving 240 ml/ 1 cup) (by MIKEGINA)
    2 cup Half and Half Cream
    2 1tsp Canola Oil
    793 gram(s) Muir Glen Organic Fire Roasted Crushed Tomatoes (1/4 cup)


Optional: Top each serving with a tablespoon of shredded cheese or a dollop of sour cream. (not in nutritional info)


HEAT a large pot over medium-high heat with canola oil. When hot add the onion & garlic. Saute for about 2 minutes.

ADD the tomatoes, red pepper, chicken stock, salt and pepper. Bring to a boil, then remove from heat and reduce heat to low.

PUREE the hot mixture with an immersion or regular blender.

STIR in the sugar and half & half.

CONTINUE heating the soup mixture on low heat for 20-30 minutes.
