    1 lb. lean ground beef
    1/2 cup chopped onion
    1/2 cup diced celery
    1 pkg. (10 oz.) frozen mixed vegetables
    1 can cream of celery soup
    1 cup water
    1 packet beef stew seasoning
    6 servings prepared potato buds


Preheat oven to 350

Cook onions and celery in a skillet in the olive oil until the onions are translucent.
Brown the ground beef
Add the vegetables, soup, seasoning packet and water and cook until vegetables thaw.
Prepare potato buds per package instructions.

If you are using an oven-safe skillet (I use a 12" cast iron skillet) spread the mashed potatos over the top. If your skillet can't go into the oven, you will need to place in a casserole dish before covering with the potatos.

Bake for about 20 minutes until the top of the mashed potatoes brown and get crispy.
