Ingredients

    1 block Tofu, firm, crumbled
    2.4 oz Soyrizo, Vegan Chorizo
    1/2 Large Onion, chopped
    1/4 of Large Green Bell Pepper, chopped
    1 tbsp Extra Virgin Olive Oil
    2 cloves Garlic, minced
    1/4 tsp Indian Black Salt (or more to taste)
    dash turmeric (optional for color)
    black pepper to taste
    1Tbsp Nutritional Yeast Seasoning

Tips

Add more black salt for more eggy flavor.


Directions

Drizzle a large pan with the olive oil, then add onion, pepper and garlic. Sauté for about 3-5 minutes until onions start to become translucent. Add Tofu and soyrizo, along with the turmeric and black pepper. At the very end sprinkle with black saltContinue to stir for about 5 more minutes until combined. Serve on a tortilla with your choice of fix'ings.
