Ingredients

    6 fl oz Lemon Juice
    1 tbsp Organic Dijon Mustard, 1 tsp
    1 cup Extra Virgin Olive Oil
    .5 large whole (3" dia) Red Ripe Tomatoes
    1 tbsp Rosemary, dried
    1 tsp Sea Salt
    .5 tsp Pepper, black
    1 tsp Oregano, ground
    4 servings Wild salmon filets (4-6 oz. each)

Directions

1. Whisk together all ingredients, except the salmon.
2. Arrange fillets in a baking dish.
3. Pour sauce on top.
4. Bake at 400 F for 8-10 minutes.
