Introduction

Healthy, Semi-Raw, Gluten-free and Vegan Reese's like treat! Healthy, Semi-Raw, Gluten-free and Vegan Reese's like treat!

Ingredients

    For the "Dough"
    1/4 tsp Sea Salt
    3/4 cup Organic Creamy Peanut Butter
    1/2 cup Organic Raw Coconut Flour, or Almond Flour
    1 tbsp Organic Agave Syrup, or Organic Maple Syrup
    15 Dates (if using Medjool Dates decrease to 10-12), soaked in warm water for about 10 minutes to soften them
    2 tbsp Organic Virgin Coconut Oil
    1 tbsp Raw Organic Cacao Nibs (gives a little crunch)

    For the Chocolate Coating
    1/4 tsp Sea Salt
    1/2 cup semi-sweet chocolate chips (make sure they are vegan and gluten-free)
    1 tbsp Organic Virgin Coconut Oil



Tips

If you want to make this fully raw, replace the chocolate chips with 1/2 cup Raw Organic Cacao Powder and increase the coconut oil to 2 Tbsp. In addition, add extra agave or maple syrup to taste (about 1 Tbsp)


Directions

In a food processor, mix all your "dough" ingredients until a doughy mixture forms. Roll into 1-inch balls and place on parchment paper.

In a separate microwave safe bowl, place the chocolate chips and additional coconut oil and melt. Mix to combine.

One by one, dunk the PB balls in the chocolate coating, shaking off and draining excess chocolate before placing back onto parchment paper. Sprinkle each ball with a little bit of sea salt. Allow to cool and harden. (You can speed this up by placing into the freezer)
