    1 tbsp olive oil
    1/2 onion, diced
    1 garlic clove, chopped
    1 small potato, diced
    100g sweet corn
    75g couscous
    1 1/4 cup hot vegetable stock


Heat oil in pan. Add onion and garlic and stir for up to five minutes until onion has softened.
Add vegetable stock and potato, bring to boil and leave to simmer for 5 minutes.
Add sweetcorn and couscous.
Leave to simmer until couscous has cooked - approx 5 minutes.
Bring pan off heat and using hand held blender, half liquidise mixture.
