Introduction

Ingredients

    16 vine ripened tomatoes diced&deseeded(these are small but good year round when you can't get the local big ones, you would use less if they are large)
    10 cloves garlic chopped
    5-6 tbsp EVOO extra light preferably
    15 basil leaves chopped
    15 oregano leaves chopped
    2 small-medium yellow onions
    salt and pepper to taste

Directions

makes at least 10 servings depending how much sauce you use
Prepare everything as listed. A food processor helps cut down time. Remove seeds from the tomatoes!
To pan add EVOO, onions, garlic, and herbs cook on medium until onions and garlic soften, but before they turn brown add the tomatoes. Stir everything around so that all ingredients are evenly distributed. Cook on medium until sauce boils. Cover and turn down heat to low. cook for about 30 minutes. Then remove lid and cook for another 10 minutes to cook off any extra liquid and thicken sauce. Spread over your favorite whole wheat pasta and enjoy!

    Incredible!
    I love this recipe. I cut the recipe in half and added fresh squash and zucchini. Then it makes a great vegetable side dish and can be eaten with or without the pasta . - 6/22/08
